I guess if a plural results in an es (as in sandwiches) it doesn’t require an apostrophe.

Or if your ants are cross, they don’t need an apostrophe.

Everything else, apostrophe s.

Being that the sign is under 24 hour surveillance, it should be no problem to track down the offending speller.

“Cappucino” should be “Cappuccino.”

And, as near as I can tell, “surveillance” always has 2 ‘L’s.

As far as the consistent capitalization of the ‘H’ in chocolate, I think that’s probably more of a quirk in the author’s handwriting more than anything else.
